Post Weight Loss Surgery Menus: A day in my pouch

A day in my pouch is a series of blog posts to show what a typical daily menu looks like in my post weight loss surgery world. Here's what yesterday's healthy and delicious menu looked like...

Breakfast: It was National French Toast Day and you know how I must celebrate all wacky holidays. I made a Microwave Protein Cake that had all the flavors of French Toast.

Weight Loss Surgery Bariatric Diabetic Fitness Protein Powder Breakfast Dessert Sugar Free

Shelly's 5 Minute French Toast Protein Cake

1 Egg, beaten
3 Tablespoons Eggnog (I used Soy Nog)
2 Tablespoons Sugar Free Caramel Torani Syrup
1 Tablespoon Canola Oil
2 Tablespoons Almond Flour or Meal
3 Tablespoons Multigrain Pancake Mix
1 teaspoon Cinnamon
dash Nutmeg
1 scoop Vanilla Protein Powder
Pinch salt
1 - 2 cup Measuring Cup or Microwave Safe Mug

In a measuring cup or microwave safe mug, Mix egg, eggnog, syrup, and oil (can sub applesauce or cottage cheese) and combine thoroughly. In a separate bowl, mix pancake mix, almond meal, spices, protein powder and salt.

Tip dry into wet and stir till combined. Nuke in microwave for 2-3 minutes... (microwaves vary, mine takes 2:30) just watch the top, when dry it's done. Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices. Great served with Homemade No Sugar Added Whipped Cream with a dash of cinnamon & nutmeg on top or I pan sauteed it with a little dab of butter and served it warm and toasty with a drizzle of Sugar Free Maple Syrup.

Cook's Note: You can also turn any of my protein cake recipes into 12 mini muffins. Just pour batter in a non-stick sprayed, mini muffin tin and bake at 350 degrees for 10-12 minutes (till toothpick comes out clean)

Lunch: My bento lunch box was especially tasty today.

Roast Beef Cold Cut Rollups Quest Cereal Protein Bar Healthy

Pink Box (top left): Cheddar Cheese Cubes and Mustard for dipping
Green Box (top right): Dill Pickle Chips
Blue Box (bottom left):  Roast Beef Cold Cut Roll-up
Orange Box (bottom right): a hunk of Quest Cereal Bar

That Quest Cereal Bar... it's totally waffles... melted butter and maple syrup... OMG yum! It's not the same texture as regular Quest Bars (not suitable for cookie making) this is more like a rice krispie treat sort of texture.

https://www.amazon.com/Quest-Nutrition-Beyond-Cereal-Protein/dp/B01N0B4DAA/ref=as_li_ss_tl?ie=UTF8&qid=1480459454&sr=8-1&keywords=quest+cereal+bars&th=1&linkCode=ll1&tag=theworlda074c-20&linkId=1dfda7215d699cd1f3949094e648462e

I love my Quest cookies and they do have better stats but this was a yummy treat. Oh they make 2 other flavors too: Cinnamon Roll and Chocolate. I haven't tried those. I'll get around to it one of these days but this flavor is going to be hard to top.

I love trying new things... well mostly. I did try a protein bar made out of crickets once. It tasted actually OK (Larabar-ish) but I couldn't get over the thought that I was chewing those things that you find in your basement back east. I took one for the team.

Dinner: I jazzed up a box of Trader Joe's Pumpkin Soup. I just sauteed a small onion till golden brown. Tossed in a 1/2 cup of cooked sausage (Jimmy Dean, refrigerator section, always in my freezer pantry) till browned a bit and warmed through and added that to a boxed pumpkin soup.

Healthy Soup Dinner Cheese Crackers Low Carb

I served it with Homemade Crunchy Cheese. I made a nice sized batch. Leftovers get a little bendy but I still think they are tasty that way. I store them in a Pyrex lidded bowl on the counter.

Snacks: Too much coffee and it's an odd snack but I roasted some brussels sprouts (drizzle of olive oil and sprinkle of Kosher salt, 425 for 30 minutes or so, turning twice) I promise you even if you HATE brussel sprouts you will love them roasted. We ate a few roasted sprouts and watched a little TV. I miss Amazing Race when it's in-between seasons. I don't really have a show I watched faithfully besides that... so I flip around... I'll start watching something, get bored in a commercial break and flip to something else... but always forget to flip back so I've seen a lot of beginning or ends of shows. Anyway... back to the sprouts... soooo good and leftovers while they aren't roasty/crispy they still have that great roasted flavor heated up the next day.

Sarawak Cultural Village is the Best Cultural Museum in South East Asia.

Sarawak Cultural Village
 Rumah Bidayuh (Bidayuh House)

Seven unique traditional houses, spread over a beautiful 17-acre site, gives you the perfect introduction to Sarawak, its cultures, whether you are looking for insight into longhouse lifestyle or a taste of exuberant Sarawak hospitality, Sarawak Cultural Village is a must visit for visitors to Kuching and Damai.

Possibly the finest "Living Museum" in South East Asia, Sarawak Cultural Village combines history, tradition, lifestyle and architecture with a dash of education and portion of theatre to create a unique multi-cultural.

"Explore Sarawak In a Half Day..."

Sarawak is rich in history and heritage. It is also known as Land of The Hornbills. The population comprises of local ethnic groups namely Iban, Bidayuh, Orang Ulu, Melanau and other minor tribes plus the Malays, Chinese and Indians living together in harmony for more than a century.

Being the largest state in Malaysia, Sarawak covers a vast area of 124,000 sq-km of land along the northwest coast of Borneo, the third largest island in the world. Sarawak offers you a journey of relentless discovery as you travel from city to city and from village to village where you will find, remnants of colonial architectures and in a rich heritage.

About Sarawak Cultural Village

Tucked away at the foothills of legendary Mount Santubong, 35 km from Kuching is Sarawak's fascinating cultural showcase, the award winning "Sarawak Cultural Village" which is also the venue for the World Harvest Festival and the Rainforest World Music Festival, an internationally renowned festival.

This living museum is wholly owned by the Sarawak Economic Development Corporation (SEDC) depicts the heritage of the major racial groups in Sarawak and conveniently portrays their respective lifestyle amidst 14 acres of tropical vegetation.

Here, it is possible to see Sarawak's ethnic diversity at a glance. The handicraft is both bewildering and tempting, including the Kain Songket (Malay cloth with gold inlay), Pua Kumbu (Iban housewives textiles), Melanau Terendak (sunhat), Bidayuh tambok (basket), Iban parang (swords), Orang Ulu wood carving and Chinese ceramics.

The 45-minute cultural performance of songs, dances and entertainment is something you will not want to miss during your visit to Sarawak.

To see Sarawak in one day, this is the basic concept of Sarawak Cultural Village, where the 48,000 square miles of Malaysia's most majestic state are condensed into just 17 acres. One leisurely stroll opens seven homes to the visitor, seven cultures, including the famous longhouses of Borneo.

Ever since tourism industry took its first commercial step into Sarawak in the 1960s, the intrepid 'adventurers' who veered off the beaten track found Borneo's unique house-form an irresistible attraction. Of course, they wanted to see the landscape of breathtaking splendour and the world's richest ecosystem, but the fascinating array of peoples and cultures was the real magnet. Unfortunately, Sarawak is huge, much of it covered by rugged mountains and jungle. How can a visitor hope to sample it all in less than three weeks of arduous travel?

A few far-sighted planners suggested that we build a 'model' village or longhouse within easy reach of Kuching. In the 1970s, cultural performances in a "langkau" in the Museum Gardens scored a spectacular success. This reactivated the idea; the Reservoir Park was suggested as a possible site, so was Sungai Cina in Matang. The Sarawak Museum contributed ethnographic and cultural input but nothing came of it. There were other development priorities.

But build it they did, SCV took shape with a Bidayuh, Iban, Orang Ulu and Melanau longhouse, a Penan hut and a Malay village house, and a Chinese farm house. By mid-1989 a solemn house-warming ceremony with offerings and sacrifice put life into the empty wooden structures. The dream had become reality.

Your chosen destination is the Sarawak Cultural Village (SCV), which is located at the foot of Mount Santubong. As Sarawak is the largest state in Malaysia, quite impossible kid roaming the entire contents niche in a short time.

So, the best way is to visit the SCV to approach the cultural traditions of various ethnic communities in Sarawak in half a day only. SCV can be likened to a museum 'life' that show how to live, home of ethnic, ritual, dance, clothing, crafts, food and so on.

The journey takes 40 minutes from Kuching. Quite early that morning because we still have not opened ticket counters and agent at Damai Beach Resort was not up yet.

The 17-acre village has 150 residents who demonstrate daily activities tribes of Sarawak like the processing of sago and handicrafts. Their traditional dress and performed traditional dances for the visitors. visitors who want to experience the lifestyle and unique residential real society.

The village also has a theater where visitors can watch a traditional dance many people, a restaurant and handicraft shops. You can even get married at the Sarawak Cultural Village follows the style of traditional Iban, Malay, Bidayuh or Orang Ulu. Longhouse found here have a row of rooms.

Thanksgiving Leftovers Transformed: Turkey Tetrazzini with Zucchini "Noodles"

This recipe is the perfect way to use up those turkey leftovers and a few veggies bumping around the fridge. I broke out the spiralizer for this but if you still haven't gotten on the bandwagon or are waiting for Santa to bring you one, you can use a julienne peeler for the zucchini or just slice the zucchini and onion very thin. I love using the spiralizer because the zucchini and onion "noodles" really give you the linguine feel that is characteristic of Turkey Tetrazzini.

FYI for those that don't know post bariatric surgery we are phased back into eating food, we go from liquids to pureed to soft to solid food. The areas that are operated on need a chance to heal and the progression (about 8 weeks or so, programs vary) gives us that opportunity while still providing needed nutrition. So this post is for you guys that are still sipping this Turkey day or for anytime you want a taste of Thanksgiving pie.

Japanese Food: Sushi

100g fresh edamame in the pods (or frozen soya beans)
handful of a favourite fruit, such as fresh pineapple, blueberries or strawberries.

Ingredients:

    100g sushi rice
    1 tbsp rice vinegar
    ½ tsp golden caster sugar
    1 sheet nori
1 smoked mackerel fillet, about 75g, flaked
    1 tbsp light mayonnaise
    2 spring onion
    Spring onions, chopped
    pea-sized blob wasabi
    Wasabi (optional)
¼ red pepper, thinly sliced lengthways, about 6 slices

Bring a pan of water to the boil and cook the edamame for 3-4 mins (or 1-2 mins if using frozen soya beans) until tender. Drain, sprinkle with salt and set aside.

Rinse the rice well in cold water until the water runs clear. Put the rice in a heavy-based pan with a tight-fitting lid and cover with 200ml water. Bring just to the boil, then put on the lid, turn the heat to its lowest point and cook for 15-20 mins, until the liquid is absorbed. Remove from the heat and leave with the lid on for another 10 mins.

Spoon the cooked rice into a wide bowl and leave to cool a little. Stir together the rice vinegar, sugar and a small pinch of salt, until the sugar and salt dissolve. Mix this into the cooled rice. Lay the nori sheet on a sushi rolling mat or sheet of cling film. With damp hands, spread the rice over two-thirds of the nori sheet.

Mix the smoked mackerel, mayonnaise and spring onions, season well with black pepper. Spread a line of wasabi down the middle of the rice, if using, and layer on the red pepper pieces, then the fish mixture.

Roll the sushi up, starting from the end covered with rice. Dampen the uncovered end to help it stick. Slice into about 6 x 3cm thick pieces.
