Beet Sliders with Micro Greens and Dill Mayo

If you’re hosting a backyard BBQ and want to impress your “not so fond of meat friends,” try these grilled beef sliders.  Great taste with an amazing health benefit as well!

Prep Time: 15 minutes       
Cook Time: 1 hour
Servings: 8-10

Ingredients:
3 large beets
Pretzel slider buns (about a dozen)
1 box of micro greens (can substitute alfalfa sprouts or radish sprouts)
1 red onion (cut into slices)

Dill Mayo:
½ cup mayo
1 tablespoon seasoning salt
1 tablespoon fresh dill
¼ cup red wine vinegar

Directions:

In a medium pan have water boiling.  Wash the three large beets and cut into about 1/3” slices.  Put beet slices into the boiling water and allow to simmer for about 1 hour.  Drain water and dab dry the patties.  Preheat your George Foreman grill to 375°.   Place the patties on the grill and close the lid and allow to grill for about 4 minutes.  Place patties on buns and add sliced onion and micro greens on top.

Dill Mayo:
In a bowl combine all ingredients and mix until well blended.  Spread on buns prior to adding slider patty.
